Pavan Launches Oriental Noodles Production Line

Pavan launches a new production line for special pasta products - “Oriental Style Noodles” - for producing flat noodles based on soft wheat or other cereals.

The innovative point of Pavan solution is the entire automation of all processing stages: the traditional manual noodle making process has been automatised maintaining the sensorial characteristics of the handmade product. The process developed by Pavan includes a product forming stage at a variable thickness and a heat treatment stage to manufacture 60 g portions having a final moisture content of 9%. The production line has a capacity of 1.000 kg/hr and comprises the stages of raw materials premixing, mixing in a special tank equipped with a resting belt, sheeting with rolls having an increased diameter, multiple calibration stages, cutting into stripes, steaming, portion forming and subsequent drying.

Among the innovative features the following may be mentioned:

• multi-tier steamer with low steam/energy consumption, equipped with special conveying system to maintain product shape
• drying in buckets with controlled temperature and humidity (product moisture content at dryer outlet 9%)
• automatic line start-up
• maximum flexibility in the use of cutting equipment to handle different noodle widths
• maximum attention to the sanitisation aspects in order to ensure the level of hygiene necessary in the various processing stages
• reduced machine size and low energy consumption.
